Beta vulgaris includes beetroot and Swiss chard. Beetroot selections are distinguished chiefly by root shape and colour; chards by leaves and the colour of their stalks and midribs.
Botanical characteristics
These are different vegetable forms within one species. Beetroot seed is commonly sold as corky seed clusters, which can give more than one seedling.
Root vegetables and leaf forms in one species
Retailers can organise this bulk list into root and leaf references. Bull’s Blood is also known for dark red foliage, while the Bright Lights Multicolour chard group is described for coloured stalks. Perpetual Spinach is a leaf-beet reference, despite its common name; it should not be confused with Spinacia spinach.
