Chicory has a deep, fleshy taproot and a basal rosette of leaves. The wild form produces wiry flowering stems with blue flower heads that usually open in the morning and close around midday. Radicchio and Belgian endive are cultivated forms of this species. It is biennial or perennial and grows in sun in well-drained soil.
